Mexican Pecan Candy Recipe
1 box brown sugar
1 stick of butter (4 oz)
1 small can of can evaporated milk
1 teaspoon of vanilla essence
1 cup of chopped pecans
Use a very heavy pan to cook the sugar, butter and milk for 10 minutes., stirring constantly. Take the pan off the heat and add the vanilla and pecans. Stir for just a few seconds and then place onto some waxed paper to allow it to cool and harden.
Mexican Pecan and Marshmallow Recipe
3 teaspoons of Karo syrup
1 1/2 teaspoons of sugar
1/2 cup of brown sugar
1/2 cup of evaporated milk
1/3 cup of butter
1/2 teaspoon of salt
1 teaspoon of vanilla essence
8 large marshmallows
5 cups of pecans
Mix up all the ingredients apart from the last two (marshmallows and pecans). Cook them in a pan until you see a soft ball forming in water that is cold. Now you can add in the marchmallows and the pecans. Keep stirring the mixture until you can see the marshmallows melting and then put it onto wax paper that has been buttered.
Mexican Cream Candy Recipe
1 1/2 cups of white sugar
1/2 cups of brown sugar
3 teaspoons of white Karo
1/2 cup of evaporated milk
1/3 cup of butter
10 large marshmallows
Put all of the above ingredients into a pan and boil them for 5 minutes. Then you should remove the pan from the heat and add in 2 cups of pecans and a teaspoon of vanilla essence. Beat the mixture up and until it becomes creamy and starts to cool. Then you can drop it onto wax paper.
Mexican Orange Candy Recipe
1 cup of brown sugar
2 cups of plain sugar
1 cup of milk
1/2 a cup of boiling water
3 teaspoons of butter
1 teaspoon of vanilla essence
1 orange rind grated
Nuts (chopped)
Add a cup of sugar into a heavy pan and allow it to brown. With the remaining sugar and the milk you should place this into a separate pan and bring to the boil. Now you should add the boiling water into the first pan. Then pour the contents of the first pan into the second pan.. Keep cooking until is creates a soft ball (238 degrees). Then take away from the heat, allowing it to cool a little. Add in the vanilla and beat up the mixture until it gets nice and thick. Add in the orange rind plus nuts and then you can pour it out onto a buttered pan.
