If you want to get into Mexican cooking in a big way, learning about the different ingredients will be a good idea. The most common ingredients you will see include garlic and chilles. Chile powder is frequently seen and it's unusual not to see it in an ingredient list! Chipotle is something you might see and it's made from Jalapenos that have been dried and smoked. Another popular type is Ancho which has a lovely sweet flavour. Neither of these recipes use Chipotle or Ancho but it's something you can experiment with once you become more familiar with Mexican cooking


Mexican Cornbread Casserole Recipe 1

Cornbread Batter Ingredients:

2 cups of self rising cornmeal
1 can (10 oz) of cream style corn
2 eggs (beaten)
1/2 cup of crisco oil
2 teaspoons of sugar (optional)
1 cup of milk (more can be added if desired)
(not to thick or not to thin) about like cake batter

Ingredients For Filling:

1 1/2 lbs of lean ground beef
1 large onion (chopped)
3 to 5 small banana peppers (chopped)
2 to 3 cups of grated cheddar cheese (mild or med)
(You may want to add in more seasoning such as chilly pepper or taco seasoning if you feel you want to)

To begin with you'll need to make the batter by mixing the corn meal, eggs, milk, sugar and cream style corn and oil together. Set this to one side.

Take a large heavy pan and put in the beef, onion and peppers and cook until the become brown. Then pour into a strainer to get rid of the excess fat. Now rinse it with hot water and allow the water to drain off.

Take a large heavy skillet and add the half of the batter mixture into in, followed by the meat mixture. Then add all of the cheese. Take the remaining batter mixture and pour if over the top.

You should now bake this in an over which has been set to 350 for about 45 minutes. When taking it out of the oven you should allow it to stand for a few minutes before you serve it.

Mexican Cornbread Casserole Recipe 2

1 lb. ground beef
1/3 cups of chopped onion
1 (8 oz.) jar mild Mexican pasteurized process cheese spread
1 (8 1/2 oz.) pkg. cornbread mix
1 (8 3/4 oz.) can whole kernel corn (drained)
1 teaspoon butter, melted
2 teaspoon chopped green pepper
2 teaspoon chopped red pepper

Brown the meat and then drain. Add in the onions and keep cooking until they are tender. Take the cheese spread and stir it in. The spoon the mixture into 4 casseroles. Now you should take the cornbread mix and follow the instructions on the packet. Then take the remaining ingredients and mix until it becomes moistended. Now you can sppon it over the meat mixture. The baking will take less than 20 minutes at 375 degrees.
