The Mexican layerd casserole is a very popular dish and people in Mexico and beyond love it. It's full of really tasty ingredients and it's the sort of thing that you can experiment with as you go along. There's no right or wrong way to cook it. Basically it's all about what you like to eat and what ingredients you might have in your kitchen

Mexican Layered Casserole Recipe

1 lb. ground beef
1 medium onion (chopped)
1 can of refried beans (16 oz)
1 can of tomato sauce (8 oz)
1 packet of enchilada sauce mix (1 1/2 oz.)
1/2 a cup of water
7 cups tortilla chips (about 8 oz)
1 cup of grated cheddar cheese (4 oz.)
1/4 of a cup of sliced black olives (optional)
2 cup of shredded lettuce
1 medium tomato (chopped)

Mix the beef and onion together then put it in the microwave at a high setting for 5 minutes (or when you see the meat is set), stir once during the micro waving. Stir it up and drain. Now you can add in the beans, tomato sauce, sauce mix and the water. Put this all back into the microwave for 6 minutes at a high setting. It should start to bubble with the heat. Stir just the once.

Slightly crush the tortilla chips and place them on a glass baking dish which is about 12 x 8 inches. Then you can spoon the meat mixture onto the chips. Sprinkle this with cheese and olives (if desired). Place it back into the microwave at the high setting for a couple of minutes so that the cheese can melt.

If you wish to garnish the dish you can do so with tomatoes and lettuce.

Make Ahead Mexican Layered Casserole Recipe

2 lb. ground meat
1 onion (chopped)
1 teaspoon of chilli powder
Small amount of garlic powder
Small amount of cumin
Salt and pepper (to taste)
6 corn tortillas
1 medium can of Ranch style beans
1 lb. grated Monterey Jack cheese
1 can of Rotel tomatoes
1 cup of Cheddar cheese
1 can cream of chicken (or cream of mushroom soup)

Put the meat, onions, chili powder, garlic, cumin, salt and pepper in a pan and allow it to brown. Then you should drain the excess fat and now it's time to start layering it in a pyrex baking dish.

The first lawyer needs half of the meet, followed by the tortillas. Then place the remaining meat on top along with the can of beans. The Monterery Jack cheese is next followed by the tomatoes. Then you can add the cheddar cheese and finally the soup.

Cover the dish and then place it in a fridge for 24 hrs. Now you can uncover it and bake for an hour at 350 degrees. This meal should server between 6 and 8.
