We all simply adore Mexican food but unfortunately the American interpretation of it tends to be very much in favour of too much fat. So if you've been eating an Americanised Mexican style of food then it's time to learn how things should be done. First of all, there's way less calories in traditional Mexican food than you might expect and as a result it's incredibly healthy due to all the fresh ingredients that are used. When you make up some mango salsa you can then use it in a huge variety of ways such as adding it to baked potatoes, soup and of course having it with tortilla chips.

1 mango (peeled and diced)
3 peaches (peeled and diced)
1 jalapeno pepper (diced)
1 vidalia onion (chopped)
1 red pepper (diced)
3 scallions (sliced)
3 limes (juiced)

Simply mix all of the ingredients together and mix.


1 c. of chopped mango
1 c. of chopped fresh peach (or nectarine)
1 clove garlic (crushed)
1/4 tsp of ginger
2 tbs of fresh basil (chopped)
1/2 serrano chili pepper, diced (or to taste)
2 tbs of fresh lime juice

Mix up the mangoes, peaches, garlic, ginger and basil. Then add in the chillies plus the lime juice to whatever your personal taste is. Allow the salsa to chill for a couple of hours before serving.


2 peaches (peeled and seeded)
1 mango (peeled and seeded)
2 tbls chives (chopped)
1/2 garlic clove (crushed)
1/2 juice of fresh lime
1 whole jalapeno (chopped, including seed)
2 tbls cilantro (chopped)

Chop up all the ingredients and then place in the fridge for an hour or more.
