Even if don't consider yourself to be much of a cook, you should easily be able to tackle a simple recipe such as the taco enchilada casserole. Ingredients For Addictive Enchilada Casserole:

1 1/2 lb. Ground beef (bite-sized pieces of chicken)
I cup of onion (chopped)
1/2 teaspoon of cumin
2 garlic cloves
4 teaspoon of chili powder
1 1/2 teaspoon of salt
1 1/2 teaspoon of pepper
1 cup of water
2 cups of salsa or taco sauce.
12 corn or flour tortillas
1 lb of shredded Monterey Jack cheese
1 cup of sour cream

How to make Dr Phil's Taco Enchilada Casserole Recipe

Preheat the oven to 375 and then grease a pan measuring 13 x 9 inches. Take a skillet and cook the meat along with the onion, then allow it to turn brown. Drain it and then add the cumin, garlic, chili powder, salt, pepper and water. Allow these ingredients to simmer (uncovered) for 10 minutes, stirring occasionally until the water evaporates. Once this is done you can put some of the sauce into the casserole. Take half of the tortillas and cover the bottom of the casserole. Then add some more of the sauce. Add in the meat mixture and top with sour cream and cheese. Place the other tortillas onto the top of this. And then add on some more sauce. Sprinkle the remaining cheese over them. Cover the dish and then bake it for 40 minutes.

Taco Enchilada Casserole Recipe 2

Ingredients

1 lb lean ground beef
1 (10 ounce) can of enchilada sauce
1 cup of salsa
6 (10 inch) flour tortillas
2 cups of frozen corn
3 (12 ounce) cups of shredded cheddar cheese

Cook the meat in a skillet until it's done then you can drain off the fat. Mix in the enchilada sauce and salsa and place it to one side. Now take 2 tortillas and place them on the bottom of a 13 x 9 inch baking pan which has been greased. Pour over about a third of the meat and then add a cup of corn. Take a cup of the cheese and sprinkle that on too. Repeat the layers with the other tortillas, meat and cheese. Bake it (uncovered) for half an hour at 350.
